Join Steve and Rich from Millington Hall Farm and discover how to take a primal cut of pork and turn it into two completely different dishes in this hands-on workshop celebrating the versatility of our amazing British pork and the magic of cooking over fire.
You’ll start with the basics of butchery, learning how to break down the cut into a French-trimmed loin and pork belly.
From there, you’ll prepare both cuts from scratch, learning not just how to cook the meat, but how to create the sauces, accompaniments and sides that complete the dish.
You’ll make delicious pork belly lollipops, alongside loin chops served with romesco sauce, burnt leeks and a cider reduction — with everything cooked over live fire.
This is a true workshop rather than a single-dish cookery class.
You’ll learn practical butchery skills, preparation techniques, side and sauce creation, and how to bring all those elements together over fire to create two seriously good plates of food.
These Workshops take place on:
Friday - 10:20am
Saturday - 13:30pm
Sunday - 12:40pm
and each one lasts for 50mins
Tickets are limited, so be sure to book early to secure your spot.
NB A ticket to enter Ludlow Food Festival will need to be purchased alongside this to gain access to the Festival and workshop.
