This very personal cook’s handbook has been compiled from the notes Nathan has kept daily throughout his career. In his new book, Michelin-starred chef, Nathan Outlaw, has distilled three decades of experience as a foremost fish expert into an indispensable resource for anyone wanting to discover and cook sustainable seafood. 

Throughout the pages are what he considers to be the most important and most useful information about his favourite subject, covering all the basics, including fishing methods, shopping & storing, step-by-step preparation techniques, and serving suggestions.

Alongside advice on curing, grilling, smoking, pickling, barbecuing, poaching and frying, are chapters that cover flat fish, round fish, oily fish, shellfish and cephalopods, providing detailed knowledge of 32 individual species.

In addition, the book contains over 80 recipes to suit all occasions and cooking skills, ranging from Brill Cured in White Wine with Grapes, Pumpkin Seeds & Basil Oil and Plaice, Aubergine & Mushroom Curry to Anchovies with Crispy Potato Wedges and Grilled Octopus Skewers.

Nathan Outlaw is a Michelin-starred British seafood chef. Nathan has two restaurants and a guest house in Port Isaac, Cornwall. He is passionate about using local, seasonal and sustainable
produce, and the importance of ethical fishing and seafood consumption. He appears regularly on BBC TV’s Saturday Kitchen and ITV's James Martin’s Saturday Morning.
