Matt Burgess, a proud New Zealand Maori and fire chef

With over 30 years of experience, Matt began his career in Wellington's top restaurants, including Dockside and the legendary Matterhorn.

Moving to London in 1998, he worked at Soho House, Bluebird in Chelsea, Gordon Ramsey’s Maze Grill, and Jamie Oliver’s Threadneedle Street. In 2015, he became the Group Executive Chef at Caravan and Vardo Restaurants, expanding the brand from two to seven locations. In 2022, Matt launched his own food consultancy, Kaiwhenua, meaning "food from the land" in Maori. Through Kaiwhenua, he creates innovative recipes for top companies like Goodman Steak House Group, Beast restaurant, London Shuffle Club, and Busaba Ethai.

A live fire and BBQ expert, Matt runs seasonal sell-out supper clubs at prestigious venues such as Fortnum and Mason and Caravan Coffee Roasters.
