Mark Lloyd, 8 Plates: Smokey, Seared, Seafood

Where:

Cookery School - Inner Bailey

When:

Join chef Mark Lloyd for an interactive workshop exploring how smoke, flame and fierce heat can transform fish and shellfish without overpowering them.

Delicate seafood. Serious heat.

Fish and fire might not seem like natural friends. They are.

We'll cook white fish with spinach and a classic butter sauce, sear scallops with miso butter, and throw clams onto the fire with bacon and garlic butter.

You'll learn how to control heat, cook delicate fish without destroying it, get a proper sear on a

scallop and use smoke as an ingredient rather than simply making everything taste like a bonfire.

Three dishes. One fire. Plenty to taste.

ON THE FIRE

White Fish · Spinach · Butter Sauce
Scallops · Miso Butter
Clams · Bacon · Garlic Butter
