Join chef Mark Lloyd for an interactive workshop putting vegetables at the centre of the fire.
Because vegetables deserve better than a courgette sliced lengthways and thrown on a barbecue.
Fire can do extraordinary things to vegetables.
It can blister, blacken, smoke, caramelise and concentrate flavour — and sometimes burning something is exactly the right thing to do.
We'll burn alliums and serve them with smoked garlic mayo, show you why brassicas become something completely different over flames, and cook charred cauliflower with crispy kale, red miso yoghurt and toasted almonds.
You'll learn how to use direct heat, embers and smoke to build layers of flavour — and how to tell the difference between beautifully charred and completely buggered.
No sad barbecue vegetables allowed.
