Beth Parmar started the highly successful Vegify Cookery School in 2022 after relocating to the beautiful Shropshire countryside with her husband, Beej.
Together they run Little Brampton Barn - a welcoming rural haven that’s home to Vegify cookery school and two luxury holiday homes. At Little Brampton Barn, guests can enjoy a truly indulgent foodie weekend, combining hands-on cookery experiences with a relaxing stay in the idyllic South Shropshire hills.
At Vegify, Beth shares her passion for vibrant, creative vegetarian cookery that celebrates flavour, freshness, and imagination. The cookery experiences are all about showing how simple, seasonal ingredients can be transformed into delicious, colourful and nourishing dishes that excite the senses. Whether it’s exploring global flavours - Indian, Spanish, Italian, Middle-Eastern, Asian - experimenting with textures, or finding joy in the beauty of vegetables, Beth inspires others to cook with confidence and creativity - showing just how easy, healthy, and delicious vegetarian food can be.

Join us for a fun, hands-on mini workshop running all day on Saturday and Sunday - choose from a 45-minute Japanese Gyoza session, where you’ll craft delicious vegetable gyozas and a spicy dipping sauce, or a 30-minute Vietnamese Summer Roll workshop, making vibrant, crunchy rice paper rolls, paired with a rich peanut dip. Prepare your dish and then sit back and enjoy eating your creation. Perfect for food lovers of all ages.
Japanese Veggie Gyozas and Dipping Sauce

The Vegetable Gyozas are filled with a tasty mix of mushrooms, cabbage and carrots, all wrapped in delicate dumpling pastry. You’ll master the classic cook method - pan-frying to create a perfectly crisp base, then steaming to achieve a beautifully soft, tender top. You’ll be making six gyozas which are served with a soy-based dipping sauce, the ideal savoury accompaniment that brings all the flavours together. Enjoy making them….and even more so eating them! Vietnamese Summer Rolls and Peanut Dipping Sauce

The Vietnamese Summer Rolls are packed with crunchy vegetables. Carrots, lettuce, spring onions, radish and cabbage are expertly sliced, then gently wrapped in soft rice paper to form beautifully light, colourful rolls. The two summer rolls you’ll prepare will be served with a peanut and soy dipping sauce, rich and savoury - the perfect pairing for your crisp, refreshing creation. Tickets for these Workshops are limited, so be sure to book early to secure your spot. Each ticket includes entry to the workshop and all tasting materials.
NB A ticket to enter Ludlow Food Festival will need to be purchased alongside this to gain access to the Festival and workshop.
