David Richards is one of the founders of Capreolus Fine Foods; they started making charcuterie in 2009. Their products have won numerous awards from the Great Taste, they pride themselves on using the finest free-range and wild meat and NEVER taking short cuts to make their products faster. Capreolus are the makers of New Forest Pannage Ham (soon to be given PGI status) which is the only acorn-fed air-dried ham made in the UK.
