Chris Monk, Corse Lawn House
Chris is Head Chef at 'Corse Lawn House,' an appointment which sees him return to where he first began his career in his early teens, and now re joins the team at the family-owned Hotel to lead all culinary operations, managing the signature Anglo-French menus.
His first taste of cooking was whilst in the Boy Scouts, then began cooking as a career at 15, hoping to earn enough money for a moped! Chris began at Corse Lawn as a commis chef, progressing to chef de partie before moving to Southampton, working in a three rosette Restaurant followed by the one Michelin starred 'Montagu Arms Hotel' at Beaulieu. After five years (and meeting his wife) he moved back to Tewkesbury to commute to the two Michelin starred 'Le Champignon Sauvage' in Cheltenham, and now Chris is back to where it all began, putting his own stamp on the kitchen whilst keeping to its core values it has held for 41 years.
Everything is cooked fresh, from the brioche for breakfast, the scones for afternoon teas to the petit fours, everything is made in house and using local, seasonal produce.
