Join Sarah Crow from STRAWBERRY FIELDS FARM, an award-winning breeder pedigree of Shropshire sheep, and John Jackson of BIRCHWOOD FORESTRY for a real taste of the region.

Sarah has just been awarded THREE gold stars at the 2019 Great Taste Awards for her Woodland Reared Pork. Join her on the Fire Kitchen stage to learn more about the importance of using well-sourced meat, and why hers really is gold standard!

John Jackson of Birchwood Forestry to learn why using locally and responsibly sourced wood and charcoal brings out the best flavours in the meat. Birchwood is located in the lower Wye Vally within Herefordshire and is owned by John Jackson and his brother. The woodland has been in the family for over four generations and now it is John's turn to manage it.  The woodland was granted Site of Special Scientific Interest (SSSI) status in 1985 and is made up of Ancient Semi-Natural high forest with an outstanding population of wild daffodils and bluebells.  The woodland is actively managed under a long-term management plan which has been approved and regularly reviewed under Natural England and Forestry Commission's guidance.
